I've never been one to give up easily, which, at times, was to my parents' frustration. I remember climbing up on the counter to get something out of the cabinet, never thinking I would fall. Of course, my mother thought differently as she came into the kitchen and saw me standing on top of the counter. I was independent and strong willed and I went full force after something I wanted to accomplish. I studied hard, and got good grades as a result. I didn't give up easily, and sometimes, not at all. We didn't have much money, and I wanted things; clothes, jewelry, albums, shoes, sneakers, so at 14, I got my working papers and started a job at a house of retreat in our town. My job was to help set up the tables for the guests to eat breakfast. We then had a room with a TV and couches that we had to wait in until breakfast was over, and we'd clean up. Then it was back to the room until it was time to set up for lunch. After we cleaned up, we were done, sometimes scheduled to come back for dinner. I was able to get my own phone, and whatever else I wanted. My dad didn't have money for my High School yearbook, so I bought that for myself, as well as my High School ring. I wonder whatever happened to that ring? I worked there until I was a Junior and then went on the half day work release program and went to school until 11, and then straight to Shop Rite. I continued there for my Senior year, and beyond, and then decided I wanted to be a dental assistant. I did that for a year, although I soon found out it really wasn't my cup of tea. I worked as a waitress and a bank teller, and again, neither were my cup of tea. My grandmother read in the paper that they were giving the civil service test at the armory, and encouraged me to take it, which I did. I passed, and got a job at a post office, and worked there for seven years. I was the only girl, and there were hundreds of names and addresses I had to memorize to sort the mail. I never thought I'd be able to remember them all, but, where there's a will, there's a way. I was the only girl, and twenty one years old. I worked with a male boss and three mailmen. I quickly mastered the names and addresses, and became the fastest sorter they ever had. When I had to deliver mail when someone called in sick, I would have done the routes in half the time, but was told by the carriers not to or they would be expected to do the same. By the time I was twenty three, I got my own apartment, furnished it, bought a corvette, and was doing well on my own. The pay was excellent, so I never needed money, and could pay my bills with ease. I was accomplishing all I wanted to, for where there's a will, there's a way, and I had the will. My next endeavor was to marry and have three kids. I was alone for two weeks at a time, and taking care of three little kids and a house and errands and bills and animals, was way harder than any job I ever had. It was physically and emotionally exhausting, but I loved every minute of it, although sleep would have been welcomed once in a while. My determination, commitment, and happiness got me through. My will was what pushed me to keep going and handling everything that needed to be done. There was a way to do it all, and I was determined, and that determination got me through. Life expects much from us, and without the power of the mind to fuel our bodies and keep us strong, we won't have the energy we need to survive and thrive. I don't think I ever met anyone who thought life was easy. I'm sure there are such people, but I've never met them. I have, however, met people who didn't do the right things, and were lazy and never accomplished much, but that was their choice, they just didn't have the drive it takes to do the right things. The one thing I didn't like about the 'Sunset Pears' recipe is using the raspberries to make a puree; it seems such an unnecessary desecration of fresh fruit straight from the garden. The purpose of making the puree is that the pink fluid is poured over cooked pears to give them a pink glow; hence the name Sunset Pears. However, my autumn raspberries are yellow and not pink; so my dish (short of using food colouring) would be yellow, not pink; hence the recipe name, Sunrise Pear. Rather than use raspberry puree I decided to use yogurt; I've used it in other fresh fruit recipes, and it's always a winner. Equally, I could have used custard to the same good effect, which is best served cool for this type of dish. Whether you use yogurt or custard, as it's best served cool it's a dish which can be prepared before the main dish and served after. The other ingredient I opted to use to really freshen up the dish, which was not in the Sunset Pear recipe, was the addition of banana; and with a few other tweaks to the original recipe I served up a fruity dish which the whole family demolished with delight.
